Jamie Oliver’s delicious macaroons recipe

Take a bite (and some more) of Jamie Oliver’s coconut, dark chocolate and vanilla macaroons.

Taking just 40 minutes to be ready, there will be enough to go around, becoming a Christmassy treat before the big day.

Only requiring six ingredients to make, Jamie Oliver promises they’re “not too tricky” to make.

Here’s how to recreate Jamie Oliver’s magical macaroons that people will swoon over.

Macaroons

Ingredients

Two large eggs

100g caster sugar

One tsp of vanilla bean paste

200g desiccated coconut

One tbsp of cornflour

50g quality dark chocolate (70 percent)

Method

Preheat the oven to 150C (300F/gas two). In a large bowl, whisk the egg whites with the caster sugar, vanilla bean paste and a pinch of sea salt for about two minutes.

In another bowl, whisk together the desiccated coconut and cornflour to combine, then fold into the egg white mixture. Set aside to rest for 10 minutes.

Line a baking sheet with greaseproof paper. Roll tablespoons of the macaroon mixture into balls, and space them evenly apart on the greaseproof paper and bake for 18 to 20 minutes, then transfer to a wire rack and leave to cool.

Snap the chocolate into a heatproof bowl, and melt over a pan of gently simmering water, stirring regularly – make sure he water doesn’t touch the base of the bowl.

Once melted, transfer the chocolate to a small bowl to cool slightly. Drizzle the cooled macaroons with the melted chocolate and leave to set in the fridge.
