This creamy Tuscan salmon recipe is loaded with flavour and will leave you and your loved ones coming back for seconds.
The meal, which is gluten-free, includes perfectly seared salmon with an ultra-creamy, mouthwatering sauce that’s full of blistered tomatoes, sun-dried tomatoes, onions, spinach, and seasonings to give it a kick like garlic, basil, as well as parsley. The meal can be made in just over 30 minutes.
Ingredients:
Salmon
Onion
Garlic
Cherry tomatoes
Sun-dried tomatoes
Vegetable broth
Heavy cream
Fresh baby spinach
Olive oil
Butter
Salt and pepper
Basil
Parmesan cheese
Fresh parsley

Making the sauce
1. Saute the onions and garlic.
2. Add in cherry tomatoes, sun-dried tomatoes, and spices, and saute for 5 minutes or until the tomatoes blister.
3. Add in the vegetable broth and cream and bring to a simmer.
4. Add in Parmesan cheese and spinach, let spinach wilt.
Once your sauce has been made, add the salmon back in, heat it up for a minute or two, top it with parsley, and dig in!
This meal can be served with a side of roasted potatoes, pasta, salad, or garlic bread.
