Sticky and sweet glazed carrots are ‘easy to prepare’ – recipe

Carrots can often taste bland, especially if they’re just boiled in a saucepan in plain water.

However, costing less than £1 for a bag, they’re cheap and can taste delicious if they’re cooked correctly.

With this in mind, the fruit juice company EAGER has shared their recipe for roasted orange glazed carrots.

The experts said using orange juice on carrots is a culinary hack that is “guaranteed to supercharge the vegetable”.

They added: “Sweet, buttery, citrussy and sticky, you can experiment with using honey or herbs like thyme to get them tasting just right.

“They’re also really easy to prepare – you can make them on the hob, in the oven or even in a slow cooker.”

Roasted orange glazed carrots

Ingredients (serves 3):

  • 3 tbsp orange juice
  • 50g brown sugar
  • 2 tbsp butter
  • Carrots, peeled and sliced
  • ½ tsp salt
  • 1/8 tsp pepper
  • Extra virgin olive oil

Method:

1. To roast your carrots, first preheat the oven to 200C/180C fan.

2. Next, put the orange juice, brown sugar and butter in a small saucepan and cook the mixture on low.

3. The sauce will be done once the sauce has thickened up and the sugar has dissolved in the orange juice and butter.

4. Place the carrots on a baking tray, drizzle them with olive oil and season them with salt and pepper. Thyme can be added at this point if you wish.

5. Next, pour over the orange glaze and cover them with foil. Allow them to bake in the oven for 10 minutes.

6. After 10 minutes, remove the carrots from the oven and remove the foil. You can give the tray a shake at this point if the sauce isn’t quite covering all of the carrots.

7. Put them back in the oven for another 10 minutes without the foil or until the carrots are tender.
