Jamie Oliver’s ‘super-easy’ Caprese salad recipe

As today is set to be the hottest day of the year on record in the UK, sometimes the last thing you want to do is cook.

However, chef Jamie Oliver has shared his “super-easy” recipe for a caprese salad. The dish is his take on the classic dish and is served with grilled peppers, mozzarella and juicy ripe tomatoes.

According to the chef’s website, it reads: “This is my twist on the Italian classic salad and is perfect for whipping up on a hot summer’s day.”

It serves four people and cooks in 25 minutes, perfect for a quick dinner on a hot summer’s day after work.

The chef recommended “always use fresh basil and the best mozzarella you can find” for the best taste.

How to make Jamie Oliver’s Caprese salad recipe

Ingredients

two red peppers

four balls of good-quality mozzarella cheese

400g ripe cherry tomatoes

extra virgin olive oil

one bunch of fresh basil, (30g)

Method

Firstly, place the peppers directly onto a naked gas flame or under a very hot grill and let them blacken and blister.

Turn them every now and then with a pair of metal kitchen tongs. When blackened all over, pop them into a bowl and cover with clingfilm.

You will need to leave the peppers to steam for about 10 minutes, then remove the clingfilm and leave them to cool.

When they are cool enough to handle, rub off the blackened skin and brush away the seeds from the inside.

Next, tear the mozzarella balls into chunks and divide them between four plates. Tear the peppers into strips and divide over the plates of mozzarella. Then you will need to halve the tomatoes and scatter them over the top.

Make sure to season them well with sea salt and black pepper until perfect and drizzle with olive oil. Pick and tear up the basil leaves and sprinkle them over the salad before serving.
