Make delicious and hearty Irish stew recipe by The Clover for St. Patrick’s Day

The Clover is a bar and restaurant located in Rosemont, Minnesota. Chef Jeremy Bechtold, from The Clover restaurant, recently told KARE 11 about his culinary expertise in preparing delectable Irish dishes and the cooking techniques he employs to enhance the flavours of these beloved St. Patrick’s Day classics.

One of The Clover’s signature dishes, Irish stew, is a delightful and hearty meal perfect for celebrating this St. Patrick’s Day. Originating from Ireland, Irish stew, or Stobhach, typically features a combination of root vegetables and either lamb, mutton, or beef. Like many traditional dishes, the exact recipe for Irish stew can vary depending on the region and time period.

Instructions:

In a large cooking vessel such as a braiser, Dutch oven, or pot, heat oil over medium-high heat. Brown your meat, seasoned with black pepper and salt, on all sides until well seared.

Remove the meat and add in carrots, onion, garlic, and tomato paste. Cook until the onions become translucent.

Pour in Guinness and red wine and allow the mixture to boil until it reduces by half.

Add rosemary, thyme, and bay leaf to the pot.

Add chicken and beef stock along with the potatoes.

Allow the mixture to simmer, then cover and cook for approximately 1 to 1½ hours, or until the meat is tender.

Thicken the stew to your liking by adding a cornstarch slurry and cooking it further.

Finish off by garnishing with fresh parsley.

Serve accompanied by grilled or toasted buttered bread.
