Banana muffins are so simple and easy to make; they’re a great treat to share with loved ones over the weekend. These yummy bakes can be made with a few essential baking ingredients – such as flour, butter, and baking powder – in addition to ripened bananas and chocolate chips.
One of the best parts of this recipe is that you can add as many or as few chocolate chips as you desire. Better still, this recipe delivers delicious results with minimal fuss. Plus, you can easily customise it with nuts or even a hint of cinnamon to suit your taste.
Makes: 12 muffins
Prep: 10 minutes
Cooks in: 20 to 25 minutes
Ingredients
Three bananas
195g plain flour
70g Unsalted Butter
Milk chocolate chips
One teaspoon of baking powder
One teaspoon of baking soda
100g brown sugar
One egg
A quarter teaspoon of sea salt
Half a teaspoon of vanilla extract
Method
Preheat the oven to 180C. Mash the bananas together with a fork. Line the muffin cups with paper liners.
Whisk together the flour, baking powder, baking soda, and salt in a large bowl.
In a different bowl, whisk together the mashed banana, melted butter, brown sugar, egg, and vanilla extract.
Stir the banana mixture into the dry ingredients until the flour has disappeared.
Stir in the chocolate chips (as many as you’d like), then fill the muffin cups up to three-quarters with the mixture.
Bake in the oven for 20 to 25 minutes; the muffins are done when a toothpick can be inserted and comes out clean.
