Speedy and effortless evening meals are essential after a long day, and Mary Berry offers plenty of straightforward and mouth-watering recipes just for the occasion. One recipe is for an easy chicken dinner, which boasts a near-perfect 4.7 star rating on Good Food.
The meal involves cooking chicken breasts in Worcester sauce, honey, paprika and mustard then enveloping them in paprika cream. The recipe description stated: “Mary Berry’s comforting, creamy paprika chicken is a classic quick dinner that will please all comers. Serve with plain boiled rice or creamy mash to double the comfort factor.”
Ingredients
4 small chicken breasts, without skin or bone
150ml double cream
For the marinade
1 tbsp Worcestershire sauce
1 tbsp runny honey
1 tbsp paprika
1 tbsp grainy mustard
To serve
Young spinach
Boiled rice, cooked
Method
Combine the marinade components on a large flat plate, then lightly coat each chicken fillet with the mixture and season.
Allow to marinade for 10 minutes if time permits, before warming a large non-stick frying pan.
Add a little oil and gently cook the chicken breasts for just under two minutes on each side or until just done.
Clear any excess oil from the pan with kitchen paper, then measure the cream into a jug and blend with the remaining paprika from the plate.
Pour the paprika cream into the pan around the chicken.
Allow to bubble up and reduce slightly before serving with young spinach and plain boiled rice.
Alternatively, serve with mashed potatoes and spinach on the side, or even in a pasta dish.
