Potatoes are the perfect side dish for most meals. They’re so versatile and delicious, with so many ways to enjoy them, and they’re so easy to cook as well.
Boiling potatoes is a popular way to cook them, but it’s no surprise that it’s not the most exciting taste. But if you still want to stick to a one-pan solution with a much better flavour, then one recipe is worth a shot. Recipe creator PlantYou recently shared her method for lemony Greek potatoes that are all made in one pot, and they’re bursting with flavour.
Posting the easy recipe on Instagram to her 5.5million followers, Carleigh hailed the potatoes as the “best in the world”.
It involves coating your spuds in a flavourful marinade and then baking them in it too, resulting in a savoury side dish that’s perfect if you want a change from your usual roasties.
Fans in the comments were in firm agreement that they looked delicious, with one describing the recipe as “phenomenal”.
Another person who had recently tried it was also a huge fan, writing: “Just made these tonight! Everyone loves them!”
Lemony Greek potatoes
Ingredients
- One cup vegetable broth
- Half cup extra virgin olive oil
- One-and-a-half lemons, juiced
- Four cloves garlic, minced
- Two tsp dried oregano
- Two tsp dill, fresh or dried
- One tbsp mustard
- One tsp salt, heaping
- Six Maris Piper potatoes, sliced into wedges
- One handful fresh parsley, chopped
Method
Preheat the oven to 200C. In a casserole dish, add the vegetable broth, olive oil, lemons, garlic, oregano, mustard, dill and salt, and stir until fully combined.
Add the sliced Maris Piper potatoes, and toss everything together. Bake uncovered for one hour and 10 minutes, until the potatoes are fork tender.
Stir halfway through, making sure the potatoes are coated in the lemon olive oil mixture, and so that they don’t get burned in any areas.
Remove from the oven and finish with a sprinkle of fresh parsley and some sea salt to taste. Serve alongside your favourite chicken dishes, wraps or Mediterranean-inspired meals.
